Can't go wrong with that rig for hunting and fishing. You mentioned big water as well and depending on your definition I would not put this boat or any of the Alaskans in a big water category. I had a 2000 on Lake Erie and had to be very careful of storms out in the lake. The Alaskans are fairly flat bottom for stability which is not good for waves over a couple feet.
Good luck

I had a 1600 with the 60 hp motor and it did everything i wanted it to do. You can fish two guys easily three gets a little tight but i have done it. Handles rough water fine within reason and in your handling abilities, and comfort levels. One thing i did with both my 1600 and then a 1800 alaskan was to install a seat base in the back in the middle of the boat so when fishing two both guys are centered and can fish easily out either side of boat with no hassle. Livewell will have a screw out standpipe for a drain and a built in livewell which i used all the time. With the 75 the boat will really scoot they are great boats biggest downfall in my opinion is they are narrow when moving around and the storage compartments are not dry so be aware of that.
