Canon has a line of waterproof housings for their cameras.

I have one for my little pocket sized camera. Works great, but they are model specific.

I got a water proof case for my iPhone and it's now an underwater camera. Not sure if this is something you would consider but the pictures are really impressive. The case is made by Lifeproof.

I have a Panasonic Lumix DMC-TS4 and absolutely love it. It's not cheap but it is extremely well built and it takes great pictures. I've also used the video mode on it and it works very well.

You can also get a protective case now that is not only waterproof but floats. IMO no need to have 2 cameras anymore (cell camera, digital camera).

I have been playing around with a Kodak Play Sport that I got for my birthday. I bought a little ram mount for it and attach it to the gunnel. I need to adjust the mounting possition and angle, but so far I am happy with it. It takes video and still shots. you can also edit the video right on the camera. so far two thumbs up.
