Default Must do walleye chowder!!!!!!!!!!!

Learned this from JULS a few years ago. You gotta do it. It is delicious.

Sportsman’s Fish Chowder


4 Tbsp Butter Or Margarine
½ Cup Each Onions & Celery -- Diced Medium
¼ Cup + 2 Tbsps All-Purpose Flour
2 Cups Hot Water
2 Tbsps Minors Fish Base
1 Cup Potatoes -- Diced Medium
1 Cup Milk


Dash White Pepper


1 Cup Boneless walleye Fish Fillets -- Diced Large


In 3 qt. saucepan, melt butter over medium heat. Add onions and celery, saute/stir until
tender, apx. 10 min. Whisk in flour until well blended and evenly cooked,. 2-3 min. Re-
move from heat. Stir in water Base, potatoes, milk and pepper. Heat to boiling, stirring
constantly. Boil/stir 1 min. Reduce heat; simmer 7-10 min., stirring often. Add fish, mixing
well. Simmer 5 min. longer, stirring often. Garnish with parsley or small chunks of fish
sprinkled with paprika.

I use alot more fish and double or triple the batch.

Everyone I make it for loves it! Glad you liked it too.

When I worked at a private yacht club in the area a few years ago, I met Mr. Minor (the son of the Mr. Minor who created those soup bases), and he told me about them.

So, I tried them. I found them all here: www.soupbase.com

If you like caesar dressing...try making the one in that recipe book utilizing the "fish base". I make it all the time, and it's the best caesar dressing I have ever had. Easy to make too!

Love clam chowder so need to give this a shot.

Question - when you put in the fish, I am assuming at that point in time it is raw?

Replace water with fish stock (made from the spines/heads of filetted walleye) and replace milk with cream and it will be even next level....but sounds delicious as is.

Yes, it's raw. I chunk it into bite size pieces, and add it at the very end, along with the "milk"...I use half & half...makes it richer.

Cook for another 5 minutes, or so, or until the fish is flakey and done. It doesn't take the fish very long to cook through.

Dang...now, I want some! Guess what I'm making tomorrow with a fresh loaf of artisan bread fresh from the oven...mmmm....nommm....nommmm...nommm!!
